I saw a recipe the other day for waffles with pancetta and cinnamon in them and was considering making them. I had bacon in the freezer that I could use instead of the pancetta. Then, the other night, Jer clicked on a link and what I heard got well and truly stuck in my head and cemented my waffle making intentions. Here's how you do:
1: loop this over and over in your head. jingle that will ruin your life.
2: fry up some chopped-up bacon (and try not to eat it all).
3: mix up some waffle batter.
4: add in what remains of the bacon pieces.
5: waffle!
6: devour! (drown in butter and syrup, if you're Jer)
7: repeat!
We made up some with just the bacon in it, and then added cinnamon to the remaining batter.
They were still good.
Overall, while eating the bacon pieces was delicious, I don't think adding the bacon to the waffles made that much difference. Maybe I should have used some bacon grease in the batter instead of the oil called for? I don't know. I mean, the waffles were good, but basically just waffles. Adding the cinnamon made them smell amazing while they cooked, but still didn't alter the flavour that much. But that's okay. We still had fun. Enjoy that link. :)
